The most important thing is to be smooth. If it is asphalt you want to do your hardest braking going straight into the corner ( so you don't upset the chassis). Depending on the conditions you want to be mostly off of the throttle during hard braking then as soon as you are off of the brakes pick up...

Lbs/Hr. and Lambda
To answer your initial questions, you will need around 2100-2200 LBs/Hr. of fuel to achive 1800HP. The Lambda number and BSFC varies for every setup. If you have a good wideband 02 senser you might be able to read it. They will go down to .65 Lambda. The NTK UEGO is a good one or a Bosch LSU4 series...
