For sure less likely to hit water if you just grind the seats however deep it takes; shorten the valve tips if need be..

All exhaust seats are in and all sleeves are in. The intake seats cleaned up well. The valve guides were so tight that we had to hone a little out if them. Now I am just waiting on cam bearings.

I have done many of those blocks with no issues using a .250 deep seat insert.
the trick is what method are you going to use to dress the seats with?? Machine or stones??
If machine use the 7000 series Durabond seats they will last forever if using a stone set up use a cast seat that way it don't take a week of grinding to get the job done.
I may still have some cast seats left over from the last pair of tractor engines we did if you get me the sizes needed

We used SBI seats. We cut the pockets with our Kwik Way portable seat cutter .200" deep, drove them in and then we rough machined them with our Neway seat cutter and then finished them with stones. We hardly ever use our Neway machine because we usually cut valve seats with our VGS20 but the neway worked great for this flathead that wasn't going to fit on the VGS20.
