Did you ever think of this? With EFI, the NASCAR version of OnStar gives Brian France et al a joystick with live control of who has power or not during the progress of a race, a virtual restrictor plate adjustable on the fly.
All else equal, carburetors still make more power.

Getting really off topic, but you can’t adjust fuel trim during the race in NASCAR?? Conserve fuel and deal with reduced power for a pit stop advantage? Give one man control of every car's ignition timing and he can control who wins the race. Who can you think of that would like to do that. Honda engineers were tuning their engines on the track during the Indy 500, live by satellite, decades ago

In 2002 two-way telemetry was permitted so engineers could change settings on the cars from the pits. This is no longer allowed, but much was learned.
