Gen 6 502 Chevy oil bypass valve..
In reference to the oil bypass valves,there are two of them on this engine. I read somewhere that if not using s oil cooler to remove the bypass valve in the threaded insert that the filter screws on. Is this a good thing to do?

the center bypass is for the oil cooler. If its not used its a restrictor in the system.
Just pull it. Replace the filter bypass with the 30lb piece from GM as the stock bypass opens too easily and at a much lower pressure like about 10 lbs or less depending on age of the part.
