Those numbers are correct, but you forgot to add the 2 degrees at .050 for the BBC 'growth'.......
That is a very good cam, and probably has an interesting history.
That is the 37,909th UltraDyne cam, out of over 120,000. A lot were used in the midwest, back when they allowed BBCs on their asphalt oval tracks.

would it work well in a race/street car 540 bbc w/11.1 cr & stick shift?

In that engine, it should make around 725 BHP about 6400-6500, and it is dynamically stable at high RPM. The 310 was the exhaust cam on my 24-Hour of Daytona winner back in the 1980s.
The only problem might be the 108 LSA. It should give a 540 explosive torque, so I wouldn't run too much rear gear. It should pull good from 2500 on up.
The normal valve lash is .030" hot, but tighten it down as much as necessary to kill off that sudden jump in torque. Don't be afraid to run it at .020", if necessary.
Make sure you have a high-volume electric fuel pump and 1/2" fuel line from your gas tank to the carb.
